Try this recipe from Swinton Park’s cookery school for an autumn treat. In a large, heavy-bottomed pan heat a glug of oil with 25g of butter. Add one diced onion and a pinch of salt and cook on a low heat for 10 minutes or until soft. Add 60g of bacon and cook for a further five minutes. Increase the heat to medium, add 500g diced pumpkin flesh, 1 ltr of stock and season. Bring to the boil, then reduce the heat to a simmer and cook for about 40 minutes. Add 100ml double cream, bring to the boil again and remove from the heat. Set aside some of the liquid, then blend the remaining pumpkin until velvety, adding liquid back into the pan bit by bit as you go to the desired consistency. Strain through a fine sieve, check the seasoning and set aside. Melt 25g butter in a pan and fry 90g bacon with black pepper for five minutes. Divide the bacon between four bowls, reheat the soup and pour over. To serve, sprinkle with a teaspoon of toasted pumpkin seeds and pine nuts. Yorkshire Life: October 2020 107
