Hand har­vested straight from the fields – it’s time to en­joy the Bri­tish as­para­gus sea­son

St Ge­orge’s Day marks the start of the eight-week Bri­tish as­para­gus sea­son. It’s best eaten freshly picked, but grow­ing your own can be a labour of love. It can take up to three years for a plant to pro­duce any stems, but once it gets go­ing, new spears can shoot up ev­ery two to three days – grow­ing up to 10cm in a day. Each spear has to be care­fully hand cut when it reaches the right height.
