TEX-MEX TURKEY AND BLACK BEAN BURGERS

400g (14oz) can black beans, drained and rinsed 2 small red onions, finely chopped 4 garlic cloves, crushed 2 mild green chillies, deseeded and finely chopped 1 tbsp ground coriander 1 tbsp dried oregano 1 tbsp sweet paprika 750g (1lb 10oz) lean turkey mince (5 per cent fat or less) Low-calorie cooking spray Lime wedges, to serve Preheat the oven to 180°C/ Fan 160°C/Gas Mark 4. Dry the black beans on kitchen paper, then tip them into a large mixing bowl and lightly crush with a masher. Add the onions, garlic, chillies, coriander, oregano, paprika, the turkey, 1 tsp salt and some freshly ground black pepper and mix together well. Divide into 8 equal portions and shape into burgers. Lightly spray both sides of each burger with a little lowcalorie cooking spray and fry for 5 mins on each side, or until nicely browned. Transfer the burgers to a non-stick baking tray and cook in the oven for 8-10 mins or until cooked through. Serve hot with lime wedges and your favourite vegetables or a green salad.
