Com­bine sugar, wa­ter and half the black­ber­ries in a saucepan over medium heat. Sim­mer for five min­utes, then re­move from heat. Com­bine sugar/wa­ter mix­ture and all re­main­ing in­gre­di­ents in food pro­ces­sor, then puree un­til smooth. Run mix­ture through a strainer and re­frig­er­ate un­til well chilled (about one hour). Freeze ac­cord­ing to ice cream ma­chine man­u­fac­turer di­rec­tions or in freezer on sheet pan turn­ing mix­ture un­til de­sired con­sis­tency.
