Honey Roasted Peach Tart

IN­GRE­DI­ENTS

3 firm peaches 1⁄2 cup pure honey 1 tea­spoon vanilla ex­tract 1 tea­spoon lemon juice Puff pas­try (can be pur­chased from su­per­mar­ket)

DI­REC­TIONS

Cut peaches into 1-inch wedges. Place in bowl with 1⁄2 cup honey, vanilla and lemon to pre­vent them from turn­ing brown. Toss very well with a wooden spoon. Let peaches sit for 1⁄2 hour to ab­sorb all fla­vors. Place peaches on sheet pan with juice. Roast at 400 de­grees F for about 25 min­utes un­til ten­der and golden brown. Re­move from oven and let rest. Cut puff pas­try into de­sired shape and bake at 350 de­grees for ap­prox­i­mately 12 min­utes. Place peaches onto warm pas­try.
