Honey Roasted Peach Tart
3 firm peaches 1⁄2 cup pure honey 1 teaspoon vanilla extract 1 teaspoon lemon juice Puff pastry (can be purchased from supermarket)
Cut peaches into 1-inch wedges. Place in bowl with 1⁄2 cup honey, vanilla and lemon to prevent them from turning brown. Toss very well with a wooden spoon. Let peaches sit for 1⁄2 hour to absorb all flavors. Place peaches on sheet pan with juice. Roast at 400 degrees F for about 25 minutes until tender and golden brown. Remove from oven and let rest. Cut puff pastry into desired shape and bake at 350 degrees for approximately 12 minutes. Place peaches onto warm pastry.
