1 lb. pears, such as Bartlett, peeled, cored, and sliced (about 2 ¹∕2 cups) ¹∕2 cup sugar ¹∕4 cup honey 1 to 2 Tbsp. candied gin­ger, chopped

1 Tbsp. lemon juice

1. In a saucepan com­bine pears, 1 cup wa­ter, the sugar, honey, gin­ger, and lemon juice. Bring to boil­ing; re­duce heat. Sim­mer, un­cov­ered, 10 to 15 min­utes or un­til pears are soft and be­gin to break apart. Re­move from heat; let cool. (You will have about

2 ¹∕4 cups pears and liq­uid.)

2. Trans­fer to a blender; blend un­til smooth. Freeze in an air­tight con­tainer overnight or un­til firm. Makes 4 serv­ings.
