As a child in Aus­tria, Bar­bara Dolleschal dreamed of liv­ing in Amer­ica. Not only has her wish come true but has ex­ploded into some­thing never imag­ined― co-found­ing U.S. op­er­a­tions in Florida for a Euro­pean-based busi­ness with her hus­band, An­dreas. The cou­ple opened a Zot­ter Choco­lates shop in Cape Co­ral in Au­gust 2015. The Aus­trian choco­late com­pany is the brain­child of Josef and Ul­rike Zot­ter, among the best known and most highly dec­o­rated choco­late-mak­ers. The Dolleschals and Zot­ters met in 2004, the Dolleschals' firm pro­vid­ing tech­nol­ogy ser­vices to the grow­ing some­thing―Zot­ter Choco­lates. “Over the years,” she says, “we be­came one of the big­gest fans of his prod­uct. So many things make it ex­cit­ing, from the way they take care of em­ploy­ees to their con­cern for the en­vi­ron­ment … It’s the whole pack­age, not just a re­ally great prod­uct; it’s hon­est and it feels good.” Zot­ter is a choco­late-maker not a choco­latier, the dif­fer­ence be­ing that a choco­latier crafts con­fec­tions. The choco­late-maker, on the other hand, sources, har­vests, roasts and grinds co­coa beans.
