Ca­tron Culi­nary Cre­ativ­ity

Michael Rawl, the owner and op­er­a­tor of The Good Pie in Pie Town, has been busy prac­tic­ing some culi­nary in­no­va­tion. His lat­est cre­ation is the New Mex­ico Grilled Sand­wich. This is a mouth­full in more than one way. I was lucky enough to sam­ple one yes­ter­day.

Imag­ine the warm, thick, melted cheese of a grilled cheese sand­wich, merged with the meaty sat­is­fac­tion of a ham­burger. Now imag­ine that taken a step fur­ther, and spice it up with au­then­tic New Mex­ico green chilies, warm, crisp salty ba­con, fresh crisp let­tuce, and fi­nally icy cold, fresh, ripe toma­toes. My mouth is wa­ter­ing just typ­ing in this de­scrip­tion. Michael is also serv­ing the sim­pler cousin of this amaz­ing burger—the New Mex­ico Green Chili Grilled Cheese Burger which is also de­li­cious be­yond words.

Culi­nary in­no­va­tion is noth­ing new for Michael, who serves up the now fa­mous New Mex­ico Ap­ple Pie (you can get the recipe for that on his web­site). We’re al­ways happy to cel­e­brate in­no­va­tion here in Ca­tron County. Gourmet de­lights like these are part of makes liv­ing in, and vis­it­ing Ca­tron County such a treat for all of us.
