Refrigerator Strawberry Preserves
Easy to make and contains no added sugar other than what is in the fruit (also makes for a great cold pie filling). 1 1/3 cup strawberries 2/3 cup rhubarb (chopped) 2 tablespoons raw honey 2 tablespoons of chia seeds (buy them online if you can't find them in a store)
Cut tops off strawberries. Take tops of rhubarb and chop stalks into chunks.
Put all ingredients into a blender, blend on high until you have a smooth consistency. Refrigerate overnight before serving.
If using in a pie, bake pie crust, add blended ingredients, chill and serve with whipped cream topping.
