Catron Courier - - News -

A tasty appetizer or snack with fewer calories than chicken wings and vegetarian friendly!

1 head cauliflower cut into bite sized pieces

1 1/2 cup buttermilk (or add 1 teaspoon of vinegar to regular milk) 1 cup flour 1 teaspoon garlic powder 1 cup hot sauce (try Frank's Red Hot sauce with a tablespoon of butter)

(Or try bbq, honeymustard bbq, or New Mexico red chile!)

Mix buttermilk, flour, and garlic powder to a batter like texture. Add cauliflower pieces and stir gently until completely coated. Drop pieces onto greased cookie sheets. Bake at 350 for 25 minutes, or until golden. Gently toss in wing sauce. Serve with bleu cheese or ranch dressing.
