Triple Fruit & Oat Blended Par­fait

These portable parfaits have two fruity lay­ers: a cherry and a ba­nana layer, all topped with chopped plums and crunchy al­monds for a fill­ing break­fast. Get cre­ative with chopped fruit and nuts of your choice for sprin­kling be­tween lay­ers and on top.

BA­NANA LAYER

1 cup cooked, cold oat­meal 1 frozen ba­nana

¼ cup plain unsweet­ened al­mond milk

¼ tsp pure vanilla ex­tract (TRY: Sim­ply Or­ganic Pure Vanilla Ex­tract)

FOR SPRIN­KLING

3 plums, pit­ted and diced, di­vided

6 tbsp sliced un­salted al­monds, di­vided

CHERRY LAYER

1 cup cooked, cold oat­meal 1 cup frozen cher­ries

¼ cup plain unsweet­ened al­mond milk

1/8 tsp pure al­mond ex­tract

1. Pre­pare ba­nana layer: To a blender, add all ba­nana layer in­gre­di­ents and blend on high un­til smooth. Di­vide among 4 small jars or glasses. Di­vide half of plums and al­monds over top. 2. Pre­pare cherry layer: Rinse out blender, add cherry layer in­gre­di­ents to blender and blend on high un­til smooth. Layer over top of plums and al­monds, di­vid­ing evenly among the 4 jars.

3. Sprin­kle with re­main­ing half of plums and al­monds. Store cov­ered in the re­frig­er­a­tor for 2 to 3 days. (Plac­ing plas­tic wrap di­rectly on the sur­face will help pre­vent dis­col­oration.)
