Switchel is a re­fresh­ing fer­mented drink that starts with raw gin­ger and ap­ple cider vine­gar as its base. Here, we in­fuse the fer­ment with le­mon and mint for a tasty bev­er­age that can also relieve gas and bloat­ing. It’s easy to make and easy to drink!

4 cups fil­tered wa­ter 1/3 cup fresh le­mon juice 3 tbsp raw honey 2 tbsp raw ap­ple cider vine­gar (TRY: Bragg Or­ganic Raw Ap­ple Cider Vine­gar) 1 2-inch piece fresh gin­ger (peel on), scrubbed and thinly sliced 1/3 cup fresh mint leaves and ten­der stems

EQUIP­MENT:

1 1-qt wide-mouth glass jar with lid, ster­il­ized

1. To a 1-qt wide-mouth glass jar add all in­gre­di­ents and seal tightly; shake to com­bine. Let fer­ment in re­frig­er­a­tor for at least 12 hours, or up to 2 weeks. (NOTE: The longer the mix­ture fer­ments, the more the fla­vors will de­velop.)

2. To serve, mix ¼ cup switchel with ¼ cup still or sparkling wa­ter.
