Quick pickle raw veg­eta­bles like cu­cum­ber or car­rots by whisk­ing 2 tsp kosher salt and, if de­sired, spices and organic evap­o­rated cane juice (organic sugar) to taste, into a bowl or mea­sur­ing cup filled with 1∕2 cup white vine­gar and 1∕2 cup wa­ter. Thinly slice veg­eta­bles (you’ll want about 1 cup sliced) then trans­fer to a Ma­son jar and pour brine over top of veg­eta­bles. Place jar in fridge for 20 min­utes.
