Quick pickle raw vegetables like cucumber or carrots by whisking 2 tsp kosher salt and, if desired, spices and organic evaporated cane juice (organic sugar) to taste, into a bowl or measuring cup filled with 1∕2 cup white vinegar and 1∕2 cup water. Thinly slice vegetables (you’ll want about 1 cup sliced) then transfer to a Mason jar and pour brine over top of vegetables. Place jar in fridge for 20 minutes.
