If you can’t find pearl onions, use the equiv­a­lent shallots, or small white or red onions, cut into wedges, about 3 cups. No but­ton mush­rooms? Use white mush­rooms, or any sort of ed­i­ble lo­cal, wild or even dried ’shrooms, thickly sliced. (If us­ing canned, the liq­uid is a great ad­di­tion to the stock. To­tal amount of liq­uid in the dish should be about 31/2 cups.)
