WHAT’S IN Season? Sweet Potatoes & Oranges
It’s the middle of winter. Light is fleeting, temperatures are low and often so is our defense against colds and flus being passed around at the office and school. Luckily, the produce available at this time of year is full of the antioxidants and vitamins we need to keep us healthy.
Sweet Potatoes serve up several vitamins and minerals needed to keep healthy like vitamins A, C, B6, B3, B1, B2, potassium and fiber. The mild sweetness of the flavor pairs with smoky flavors like bacon, or mixed with an herb blend, garlic, curry, and coconut milk,– it is a great ingredient base to experiment with to create different dishes.
Oranges are well known for their vitamin C content but are also a great source of fiber, potassium and calcium. They can be mixed with many types of vegetables like kale, arugula and fennel just to name a few; added to hot dishes like a Chinese stir fry to add a sweet tanginess to the dish.
