A sim­ple gluten-free twist on the tra­di­tional sausage and pep­pers dish.

12-ounce pack­age gluten-free penne pasta 2 ta­ble­spoons olive oil 1 pound sweet Ital­ian sausage, cas­ings re­moved 2 cups thinly sliced green pep­pers 1 cup thinly sliced sweet yel­low onion 1 cup diced cel­ery 1 ta­ble­spoon minced gar­lic 2 (14.5 ounce) cans tomato sauce 1 (14.5 ounce) can pe­tite diced toma­toes 1 ta­ble­spoon brown sugar 2 tea­spoons dried Ital­ian sea­son­ing 2 tea­spoons gar­lic salt 1 cup part-skim ri­cotta 2 cups shred­ded moz­zarella cheese, di­vided 1. Cook gluten-free penne pasta ac­cord­ing to pack­age in­struc­tions. Drain and set aside in a large mix­ing bowl.
