Double Chocolate Oatmeal Cookies
YIELD: 36 SERVINGS PREP TIME: 15 MINUTES TOTAL TIME: 30 MINUTES GLUTEN-FREE, SOY-FREE NUT-FREE
2 cups gluten-free all-purpose flour 1½ cups gluten-free oats ¼ cup cocoa powder 2 teaspoons baking powder 1 cup (2 sticks) butter ¾ cup brown sugar ¾ cup granulated sugar 2 eggs 2 teaspoons vanilla extract 1 cup white chocolate chips 1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
2. In a mixing bowl, whisk together gluten-free all-purpose flour, oats, cocoa powder, baking powder and salt. Set aside.
3. In the bowl of a standing mixer using the paddle attachment, beat together the butter, brown sugar and granulated sugar until light and fluffy. Add in the eggs, one at a time, mixing well after each addition. Add in the vanilla extract and mix well.
4. Slowly add the dry ingredients into the wet ingredients and mix until well combined. Gently mix in the chocolate chips.
