BEANS AND LENTILS
Beans and lentils are nutritional powerhouses. They are a good source of potassium, calcium, zinc, niacin and vitamin K, but are particularly rich in dietary fiber, lean protein, folate and iron. Beans and lentils are low in fat and high in protein. They are perfect for making into soups and stews, or for preparing yummy burgers. Use black beans and rice to make a hearty veggie burger and top with BBQ sauce, lettuce, tomatoes and pickles. Or, try making lentil cakes by combining pureed lentils with olive oil, mint and chopped red bell peppers and scallions. Form into patties and sauté lightly in olive oil until browned on both sides. Serve with your favorite yogurt sauce.
