Beans and lentils are nu­tri­tional pow­er­houses. They are a good source of potas­sium, cal­cium, zinc, niacin and vi­ta­min K, but are par­tic­u­larly rich in di­etary fiber, lean pro­tein, fo­late and iron. Beans and lentils are low in fat and high in pro­tein. They are per­fect for mak­ing into soups and stews, or for pre­par­ing yummy burg­ers. Use black beans and rice to make a hearty veggie burger and top with BBQ sauce, let­tuce, toma­toes and pick­les. Or, try mak­ing lentil cakes by com­bin­ing pureed lentils with olive oil, mint and chopped red bell pep­pers and scal­lions. Form into pat­ties and sauté lightly in olive oil un­til browned on both sides. Serve with your fa­vorite yogurt sauce.
