Co­conut Pea Rice

The kids will love this blend of jas­mine rice, co­conut milk and green peas. The ideal side dish to any week­night meal!

2 cups jas­mine rice, washed 1½ cups unsweet­ened co­conut milk 1½ cups wa­ter ½ tea­spoon salt 1 cup frozen green peas

1. Com­bine the jas­mine rice, co­conut milk, wa­ter and salt in a medium sized pot. Bring to a boil, cover and re­duce heat to low. Sim­mer un­til rice has ab­sorbed all the liq­uid, about 20 min­utes.

2. Stir in the green peas and cook un­til soft, about 5 min­utes. Serve im­me­di­ately.
