My Heart is Filled with Gua­camole…

The nat­u­rally gluten-free na­ture of Mex­i­can food makes it the per­fect choice for those liv­ing a gluten-free lifestyle. Based heav­ily on corn, rice, beans and fresh pro­teins, veg­gies and fruits, you can’t go wrong with these bold and fla­vor­ful recipes.

Delight Gluten Free - - Enlighten -

Our test kitchen team likes to make fun of me that I planned for De­light to do a Mex­i­can-themed is­sue while I was preg­nant. While my in­tense crav­ings for tacos and gua­camole may have played a small role in the de­ci­sion, the real an­swer is that Mex­i­can cui­sine is truly a gluten-free diner’s best friend. I’m so thank­ful for the gluten-free-ness of the ma­jor­ity of in­gre­di­ents and wanted to share these in­cred­i­ble recipes with our read­ers.

En­chi­ladas seem like a time con­sum­ing meal to make, but the reality is that they’re ac­tu­ally pretty easy to as­sem­ble. Most store bought en­chi­lada sauces are nat­u­rally gluten-free and with our tips for spic­ing them up with fresh herbs, you’ll have a di­vine sauce to add to your fill­ings. Most Mex­i­can res­tau­rants of­fer fairly stan­dard op­tions like chicken, cheese or beef for fill­ings, but our en­chi­lada recipes fea­ture farm fresh in­gre­di­ents like but­ter­nut squash and crab, spinach and vine ripe toma­toes and wild mush­rooms.

Tacos are hands down my all-time fa­vorite food. Call me culi­nary crazy, but I’ll take a good taco any day over a cho­co­late dessert. Our taco line-up fea­tures sa­vory in­gre­di­ents like braised beef mole tacos, or­ange juice-braised car­ni­tas tacos and tequila lime shrimp tacos — all wrapped in nat­u­rally gluten-free corn tor­tillas of course! Yum oh yum!

And don’t for­get the gua­camole! I shared my all-time fa­vorite recipe for ba­sic gua­camole and then sev­eral op­tions for spic­ing it up. Ba­con and feta any­one?
