The naturally gluten-free nature of Mexican food makes it the perfect choice for those living a gluten-free lifestyle. Based heavily on corn, rice, beans and fresh proteins, veggies and fruits, you can’t go wrong with these bold and flavorful recipes.
Our test kitchen team likes to make fun of me that I planned for Delight to do a Mexican-themed issue while I was pregnant. While my intense cravings for tacos and guacamole may have played a small role in the decision, the real answer is that Mexican cuisine is truly a gluten-free diner’s best friend. I’m so thankful for the gluten-free-ness of the majority of ingredients and wanted to share these incredible recipes with our readers.
Enchiladas seem like a time consuming meal to make, but the reality is that they’re actually pretty easy to assemble. Most store bought enchilada sauces are naturally gluten-free and with our tips for spicing them up with fresh herbs, you’ll have a divine sauce to add to your fillings. Most Mexican restaurants offer fairly standard options like chicken, cheese or beef for fillings, but our enchilada recipes feature farm fresh ingredients like butternut squash and crab, spinach and vine ripe tomatoes and wild mushrooms.
Tacos are hands down my all-time favorite food. Call me culinary crazy, but I’ll take a good taco any day over a chocolate dessert. Our taco line-up features savory ingredients like braised beef mole tacos, orange juice-braised carnitas tacos and tequila lime shrimp tacos — all wrapped in naturally gluten-free corn tortillas of course! Yum oh yum!
