Toma­toes would typ­i­cally be the main in­gre­di­ent of this dish, but straw­ber­ries are an ex­cel­lent and de­li­cious sub­sti­tute.

1 pound straw­ber­ries, hulled and halved ¼ cup thinly sliced fresh basil leaves ½ cup small moz­zarella balls, halved 1 ta­ble­spoon bal­samic vine­gar 1 tea­spoon olive oil ½ tea­spoon wa­ter ½ tea­spoon finely grated fresh gin­ger ⅛ tea­spoon salt ⅛ tea­spoon black pep­per

1. In a serv­ing bowl, com­bine the straw­ber­ries, basil and moz­zarella cheese. 2. In a small bowl, whisk to­gether the bal­samic vine­gar, olive oil, wa­ter, gin­ger, salt and pep­per. 3. Pour the vi­nai­grette over the straw­ber­ries and toss to coat. 4. Cover and let rest at room tem­per­a­ture or in the re­frig­er­a­tor for 30 min­utes prior to serv­ing.
