Honey Chipotle Chicken Wings
YIELD: 4 SERVINGS PREP TIME: 10 MINUTES TOTAL TIME: 1 HOUR 10 MINUTES GLUTEN-FREE, EGG-FREE, SOY-FREE, NUT-FREE, RICE-FREE, CORN-FREE These chicken wings are just the right amount of sweet with a spicy kick! You won’t be able to resist having seconds. 1. Preheat oven to 450 degrees F. Place a wire rack inside a large baking sheet lined with aluminum foil and set aside.
2. In a large bowl, whisk together the salt and pepper until combined thoroughly. Add the chicken wings and toss until evenly coated.
3. Arrange the chicken wings on the wire rack and bake for 15 minutes. Using a fork, carefully rotate the wings without piercing and bake for an additional 15 minutes.
4. In the bowl of a food processor, combine the honey, lime juice, chipotle pepper and adobo sauce. Pulse until smooth.
5. Remove baking sheet from oven and brush wings with half of the honey chipotle sauce. Return to oven and bake for 15 minutes. Using a fork, carefully rotate the wings again without piercing and brush with the remaining sauce. Bake for 15 minutes until wings are crisp and juices run clear. Garnish with fresh cilantro before serving.
