FREEZE THEM

When you have too many duck eggs and can’t use them immediatel­y, you can freeze them.

• Choose fresh, clean eggs; rinse them in warm water; and break them into a clean bowl. Lightly whisk just to combine.

• Add

1⁄4 tsp. salt for each cup of egg to prevent a grainy texture.

• Measure out 3 Tbsp. portions (the equivalent of one medium chicken egg) into clean icecube trays.

• Freeze until solid; then remove the egg cubes, and seal them in freezer bags or containers.

• Once frozen eggs are thawed, they should be used within 24 hours. Do not refreeze thawed eggs. Frozen eggs will keep for six months and should be used only for baked and thoroughly cooked foods.
