YIELD: AP­PROX. 1 CUP ½ av­o­cado, peeled and diced 1/3 cup pump­kin seeds 2 ta­ble­spoons nu­tri­tional yeast 1 ta­ble­spoon ap­ple cider vine­gar or

fresh lemon juice 1/3 cup ex­tra-vir­gin olive oil Sea salt and freshly ground pep­per,

to taste 1/3 cup cilantro, chopped

Place the av­o­cado, pump­kin seeds, nu­tri­tional yeast, and vine­gar or lemon juice in a food pro­ces­sor and pulse to blend the in­gre­di­ents. With the pro­ces­sor on, slowly driz­zle in the olive oil. Add salt and pep­per, to taste. Re­move the mix­ture from the pro­ces­sor and fold in the cilantro.
