SERVES 4 1½ cups fresh or thawed frozen green peas 3 tablespoons fresh mint, finely chopped 1 tablespoon lemon juice, freshly squeezed 1 tablespoon extra-virgin olive oil Pinch lemon zest, freshly grated, plus

Place the peas, mint, lemon juice, and oil in a food processor. Process until smooth. Season with the lemon zest if desired, and salt and pepper to taste; pulse to combine. Spread the DairyFree Creamy Cashew Cheese on top of toast or crackers. Top with the pea spread and serve immediately. Garnish with lemon zest and mint leaves if desired.
