Tuscan London Broil with Artichoke Bruschetta

Tender, flavorful and ready in no time, this roast makes for an easy-on-you start to a wow-worthy meal the whole family will love
1 (2 lb.) beef London broil 2 Tbs. Tuscan seasoning mix,
like McCormick
3 Tbs. olive oil, divided
1 (12 oz.) jar artichoke salad
1⁄2 cup diced tomatoes
1 tsp. minced oregano 1 lemon, zested and juiced
1 Heat broiler. Rub steak with seasoning mix and 2 Tbs. olive oil. Season to taste with salt and pepper. Place in broiler pan. Broil 15 min. or until
145°F for medium-rare, turning once. Transfer to platter. Let sit 10 min.
2 Drain artichoke salad. In bowl, toss with diced tomatoes, oregano, 1 tsp. lemon juice, 1⁄4 tsp. lemon zest and remaining olive oil. Season to taste with salt and black pepper.
3 Thinly slice London broil. Serve with artichoke salad.
