1 tsp. honey 1⁄2 tsp. Dijon mustard 1⁄4 cup walnut oil
1 lemon, zested and juiced 4 cups baby spinach 1 cup cooked millet
3 cup shredded cooked
chicken
2 carrots, julienned
1 apple, cored and thinly
sliced
2 scallions, thinly sliced We used walnut oil to give the dressing a nutty flavor that complements the sweetness of carrots and apple, but olive oil or avocado oil will work too
In small bowl, whisk honey, mustard, oil, 1 Tbs. lemon juice, 1 tsp. lemon zest and salt and pepper to taste.
In serving bowl, layer spinach, millet, chicken, carrots, apple and scallions. Drizzle dressing over top; toss well to coat just before serving. Garnish with pea or beet sprouts, if desired.
