Mediterran­ean Falafel Bowl

1 (12 oz.) pkg. frozen falafel 1⁄2 cup tahini

1 clove garlic

1 tsp. cumin

1⁄2 cup packed parsley

leaves

1⁄4 cup olive oil

3 lemons, zested and

juiced

4 scallions, thinly sliced

1 cucumber, diced

4 tomatoes, diced

2 cups cooked sorghum 2 cups shredded

red cabbage Lemon-tahini dressing adds a bright flavor and creamy texture sans belly-bloating dairy. Pair with a fruity Pinot Grigio to balance the acidity

Prepare falafel as package directs. In blender, puree tahini, garlic, cumin, parsley, olive oil, 1⁄4 cup lemon juice, 1 Tbs. lemon zest and salt and pepper to taste.

In bowl, combine scallions, cucumber and tomatoes. Divide sorghum evenly among 4 shallow bowls; top each with falafel, tomato-cucumber mixture, shredded cabbage and tahini dressing as desired.
