Next, I beat together 8 oz. of softened cream cheese, 1⁄ cup of 2 sugar and 1 tsp. of vanilla extract. For the crumb topping, I mix 1⁄ cup of flour, 2 1⁄4 cup of brown sugar and half a stick of unsalted butter. To assemble, I pour the cream cheese filling into the crust, layer with 2 pounds of sliced fresh plums and add the topping. Then I pop it back into the hot oven for a few minutes to brown the crumbs.
