Lemon-Paprika “Rotisserie” Chicken

4 lemons, 2 zested and juiced,
1 Tbs. paprika
1 (6 lb.) whole chicken 1 In bowl, mash butter, 1 Tbs. lemon zest and paprika; season. Spread under and over chicken skin. Place lemon quarters in cavity. Place chicken in slow cooker; pour in 1⁄4 cup lemon juice. Cover; cook on high 4 hrs. or on low 61⁄2 hrs. or until 165°F.
2 Heat broiler. Remove chicken to baking sheet; broil 4 min. or until skin is golden brown and starting to crisp. Let sit 20 min. before carving. Serve with pan juices, if desired.
Speedy pressure cooker variation With pot set on sauté, sear buttered chicken on all sides. Lock pot; set to high pressure 25 min. Let pressure release naturally. Transfer to platter.
