Le­mon-Paprika “Ro­tis­serie” Chicken

4 lemons, 2 zested and juiced,

2 quar­tered

1 Tbs. paprika

1 (6 lb.) whole chicken 1 In bowl, mash but­ter, 1 Tbs. le­mon zest and paprika; sea­son. Spread un­der and over chicken skin. Place le­mon quar­ters in cav­ity. Place chicken in slow cooker; pour in 1⁄4 cup le­mon juice. Cover; cook on high 4 hrs. or on low 61⁄2 hrs. or un­til 165°F.

2 Heat broiler. Re­move chicken to bak­ing sheet; broil 4 min. or un­til skin is golden brown and start­ing to crisp. Let sit 20 min. be­fore carv­ing. Serve with pan juices, if de­sired.

Speedy pres­sure cooker vari­a­tion With pot set on sauté, sear but­tered chicken on all sides. Lock pot; set to high pres­sure 25 min. Let pres­sure re­lease nat­u­rally. Trans­fer to plat­ter.
