Thyme-Kissed French Onion Soup

4 lbs. onions, thinly sliced

1⁄2 stick but­ter, melted

2 qts. low-sodium beef stock 2 Tbs. minced fresh thyme 2 Tbs. red wine vine­gar 4 slices French bread

2 Tbs. olive oil In slow cooker, com­bine sliced onions, but­ter and 1⁄2 tsp. salt; toss well to coat. Cook on high 8 to 10 hrs. or un­til fra­grant and caramelized. Add beef stock, fresh thyme, red wine vine­gar and salt and pep­per to taste; cook on high 3 hrs. more. Heat broiler. Brush both sides of bread sliced with olive oil; broil 1 min. or un­til toasted, turn­ing once. Serve soup with toasts. Gar­nish with fresh minced pars­ley, if de­sired.
