While dreaming up this pastry, our test kitchen director wanted to offer a grain-free option for those who are doing our 21-day health reset (see page 58). But most grain-free recipes require multiple pricey speciality flours and can result in a dense, gummy dough that’s difficult to work with. Luckily, she found Bob’s Red Mill Paleo Baking Flour (at health-food stores and Amazon.com). Made from a blend of almond, arrowroot, coconut and tapioca flours, this mix can be used in place of all-purpose flour at a 1:1 ratio. Just bake the cake for an extra 5 minutes to ensure the dough cooks through.
