“When you’re a working mom, it’s hard to stick with a healthy eating routine,” admits Nancy. But over the years, she’s found an easy way to make sure she’s getting all the slimming nutrients she needs. “I make a big pot of this really delicious soup. I throw in every vegetable I might not be eating, and it’s very filling,” says Nancy. “I’ll sauté chopped-up zucchini, summer squash, Brussels sprouts, broccoli, celery and any other kind of vegetable you can think of with olive oil, garlic and onion until softened, then I add a little bit of lowsodium chicken broth and purée it in the blender until smooth. It comes out fluffy and frothy, and it tastes like it has cream in it, but it’s just lots of vegetables. I’ll have one cup and I’m full, but I’ll have gotten so many nutrients and lots of fiber to keep me going.”
