2 eggs ¾ cup gran­u­lated sugar ¾ cup dark corn syrup 4 ta­ble­spoons but­ter, melted (½ stick) 1 tea­spoon vanilla ¾ cup oats (quick or old fash­ioned), un­cooked • 1/3 cup shred­ded

co­conut • 2 ta­ble­spoons all-pur­pose flour 9-inch pie shell, un­baked


Heat oven to 350° F. In a large bowl, beat eggs un­til foamy. Grad­u­ally add sugar, mix with eggs. Add corn syrup, but­ter and vanilla, then mix. Add com­bined oats, co­conut and flour; mix well. Pour into pie shell. Bake 40–45 min­utes or un­til cen­ter is set. (Cen­ter should be firm when touched lightly with fin­ger). Cool com­pletely on a wire rack be­fore you eat your slice!
