Grandma’s Le­mon Cook­ies

3 cups flour 1/2 tea­spoon salt 2 sticks but­ter, cubed and soft­ened 11/2 cups con­fec­tion­ers’ sugar 1 ta­ble­spoon le­mon zest 1 tea­spoon vanilla ex­tract 2 tea­spoons le­mon juice 1 large egg

Pre­heat oven to 350 de­grees. Put flour and salt into a small mix­ing bowl. Whisk to com­bine; set aside. In a large mix­ing bowl, com­bine but­ter, sugar and zest. Us­ing mixer, mix un­til light and creamy. Add vanilla, le­mon juice and egg; mix un­til fully com­bined. Add re­served dry in­gre­di­ents and mix on low, un­til just com­bined.

Us­ing a cookie press, load dough to the fill line and press out onto an un­greased, un­lined cookie sheet about 11/2 inches apart. Bake 10 to 12 min­utes, or un­til lightly golden brown on edges. Cool cook­ies be­fore re­mov­ing from pan. Makes 80 medium-size cook­ies.
