Grandma’s Lemon Cookies
3 cups flour 1/2 teaspoon salt 2 sticks butter, cubed and softened 11/2 cups confectioners’ sugar 1 tablespoon lemon zest 1 teaspoon vanilla extract 2 teaspoons lemon juice 1 large egg
Preheat oven to 350 degrees. Put flour and salt into a small mixing bowl. Whisk to combine; set aside. In a large mixing bowl, combine butter, sugar and zest. Using mixer, mix until light and creamy. Add vanilla, lemon juice and egg; mix until fully combined. Add reserved dry ingredients and mix on low, until just combined.
Using a cookie press, load dough to the fill line and press out onto an ungreased, unlined cookie sheet about 11/2 inches apart. Bake 10 to 12 minutes, or until lightly golden brown on edges. Cool cookies before removing from pan. Makes 80 medium-size cookies.
