Manly-Man Ro­tini Salad

1 pack­age Pol­ish kiel­basa (skin­less, pre­cooked chicken breasts can be sub­sti­tuted)

Olive oil

1 (16-ounce) pack­age mul­ti­col­ored ro­tini

1 pack­age cherry toma­toes

1 each green, yel­low and or­ange bell

pep­per, diced into bite-size pieces

1 large cu­cum­ber, sliced and quar­tered (I pre­fer the English cu­cum­ber that you don’t need to peel. If you use an Amer­i­can cu­cum­ber, peel it)

2 bunches green onions, chopped

1 (8-ounce) pack­age ex­tra-sharp ched­dar cheese, cubed into bite­size pieces

1 can jumbo black olives, drained Mir­a­cle Whip salad dress­ing Pep­per to taste

Cut kiel­basa into bite-size pieces and sauté in a small amount of oil un­til slightly brown. Drain, pat with a paper towel and set aside to cool. Boil ro­tini to just al dente. Drain and cool. Place both sausage and ro­tini in a large bowl and add toma­toes, pep­pers, cu­cum­ber, onions, cheese and olives. Add salad dress­ing to taste. Sea­son with freshly ground pep­per.
