The Lands by, the newly renovated 41-room hotel in Solvang, has transforme­d the former Petersen Village Inn by channeling the California town’s Danish roots into Scandinavi­an chic. The building still has half-timbered architectu­re, but it has been whitewashe­d for a more modern look. Rooms vary from a classic queen with a single bed to the Tower Suite King, a two-story suite with a sitting room that has a fireplace and wet bar, plus a jetted tub in the bathroom. The renovation brings a new dining option. Mad& Vin (Food& Wine, in Danish) is billed as a restaurant that reworks some classic Danish dishes but adds fresh California options.
