The Lands by, the newly ren­o­vated 41-room ho­tel in Solvang, has trans­formed the former Petersen Vil­lage Inn by chan­nel­ing the Cal­i­for­nia town’s Dan­ish roots into Scan­di­na­vian chic. The build­ing still has half-tim­bered ar­chi­tec­ture, but it has been white­washed for a more mod­ern look. Rooms vary from a clas­sic queen with a sin­gle bed to the Tower Suite King, a two-story suite with a sit­ting room that has a fire­place and wet bar, plus a jet­ted tub in the bath­room. The ren­o­va­tion brings a new din­ing op­tion. Mad& Vin (Food& Wine, in Dan­ish) is billed as a restau­rant that re­works some clas­sic Dan­ish dishes but adds fresh Cal­i­for­nia op­tions.
