Maple syrup adds a touch of rich deca­dence to this sunny smoothie. To a blen­der, add 1½ cups co­conut wa­ter or wa­ter, 4 medium apri­cots (pit­ted and chopped), 1 tsp pure maple syrup and 2 cups frozen peaches. Puree on high 30 to 60 sec­onds, un­til smooth and creamy. Serves 2.
