Chicken Lime Caesar Sandwich
This concoction is a riff on Caesar salad, with an anchovy-lime dressing tossed with chicken and toasted sourdough bread standing in for croutons. In a medium bowl, whisk together 2 Tbsp extra-virgin olive oil, 1½ Tbsp finely grated Parmigiano-Reggiano cheese, 2½ tsp lime juice, 1 grated
garlic clove ,½tsp anchovy paste and salt and freshly ground black pepper to taste. Add 2 cups chopped cooked chicken ;2 radishes, cut into matchsticks, and 2 thinly sliced green onions, tossing to coat. Spread ¼ cup mayonnaise evenly on 8 slices toasted sourdough bread. Top 4 slices with 1 romaine lettuce leaf each. Top evenly with chicken mixture and remaining bread slices. Serves 4.
