Chicken Lime Cae­sar Sand­wich

This con­coc­tion is a riff on Cae­sar salad, with an an­chovy-lime dress­ing tossed with chicken and toasted sour­dough bread stand­ing in for crou­tons. In a medium bowl, whisk to­gether 2 Tbsp ex­tra-virgin olive oil, 1½ Tbsp finely grated Parmi­giano-Reg­giano cheese, 2½ tsp lime juice, 1 grated

gar­lic clove ,½tsp an­chovy paste and salt and freshly ground black pep­per to taste. Add 2 cups chopped cooked chicken ;2 radishes, cut into match­sticks, and 2 thinly sliced green onions, toss­ing to coat. Spread ¼ cup may­on­naise evenly on 8 slices toasted sour­dough bread. Top 4 slices with 1 ro­maine let­tuce leaf each. Top evenly with chicken mix­ture and re­main­ing bread slices. Serves 4.
