To make the pow­dered berries for the vari­a­tions be­low, process freeze-dried fruit in a food pro­ces­sor un­til fine. Use im­me­di­ately.

3 cups con­fec­tion­ers’ sugar

1/4 tea­spoon kosher salt

6 to 8 ta­ble­spoons fresh le­mon juice (from 2 to 3 lemons)

Whisk to­gether con­fec­tion­ers’ sugar and salt. Whisk in juice un­til mix­ture is smooth and thick, and has the tex­ture of pourable honey. Glaze can be re­frig­er­ated in an air­tight con­tainer up to 3 days; stir un­til smooth be­fore us­ing.
