Chicago’s dining scene just added another James Beard Award-winning chef, as San Francisco-based toque Michael Mina has opened the sophistica­ted new Gallic spot Margeaux Brasserie. The chef’s first Windy City effort, Margeaux boasts a seriously plum Gold Coast location, on the third floor of the Waldorf Astoria. What to expect from the menu? Think elevated takes on French classics, from escargots à la Bordelaise to hand-ground steak tartare and onion soup with black truffle duxelle, not to mention decadent breakfast options like French toast with Tahitian vanilla, blueberry, and Meyer lemon curd (PICTURED). “It’s a perfect example of [our] culinary program,” notes executive chef Brent Balika of the dish, “and it captures the simple luxury we hope to become known for.” 11 E.
