Chicago’s din­ing scene just added an­other James Beard Award-win­ning chef, as San Fran­cisco-based toque Michael Mina has opened the so­phis­ti­cated new Gal­lic spot Margeaux Brasserie. The chef’s first Windy City ef­fort, Margeaux boasts a se­ri­ously plum Gold Coast lo­ca­tion, on the third floor of the Wal­dorf As­to­ria. What to ex­pect from the menu? Think el­e­vated takes on French clas­sics, from es­car­gots à la Borde­laise to hand-ground steak tartare and onion soup with black truf­fle dux­elle, not to men­tion deca­dent break­fast op­tions like French toast with Tahi­tian vanilla, blue­berry, and Meyer lemon curd (PIC­TURED). “It’s a per­fect ex­am­ple of [our] culi­nary pro­gram,” notes ex­ec­u­tive chef Brent Ba­lika of the dish, “and it cap­tures the sim­ple lux­ury we hope to be­come known for.” 11 E.
