Birch + Butcher shop now open

The butcher shop of the forth­com­ing res­tau­rant Birch + Butcher opened Satur­day at 459 E. Pleas­ant St. in the first-floor re­tail space at the North End Apart­ments.

The butcher shop has fresh meats, cheese, char­cu­terie and an as­sort­ment of ac­cou­ter­ments. The shop is open daily from 7:30 a.m. to 5 p.m.

Char­cu­terie — sum­mer sausage, salami, ghost pep­per­oni — is from Madi­son’s Un­der­ground Meats. Ar­ti­san cheeses in­clude some from Wis­con­sin mak­ers, Emmi Roth and Up­lands. Cof­fee and espresso served are from Chicago roaster, Dark Mat­ter Cof­fee.

The butcher shop is just the first part of Birch + Butcher. A full-ser­vice res­tau­rant with “fam­ily-style con­tem­po­rary Mid­west­ern cui­sine” will open next week.

Un­til then, Birch + Butcher is serv­ing a small menu start­ing Wed­nes­day.

The of­fer­ings in­clude break­fast and lunch items like bagels, sand­wiches, sal­ads and soups.

Din­ner items will be served within a few days.

Birch + Butcher is a project from Chef Miles Borgh­graef and Madi­son’s Un­der­ground Food Col­lec­tive.
