Birch + Butcher shop now open
Store located on E. Pleasant St.
The butcher shop of the forthcoming restaurant Birch + Butcher opened Saturday at 459 E. Pleasant St. in the first-floor retail space at the North End Apartments.
The butcher shop has fresh meats, cheese, charcuterie and an assortment of accouterments. The shop is open daily from 7:30 a.m. to 5 p.m.
Charcuterie — summer sausage, salami, ghost pepperoni — is from Madison’s Underground Meats. Artisan cheeses include some from Wisconsin makers, Emmi Roth and Uplands. Coffee and espresso served are from Chicago roaster, Dark Matter Coffee.
The butcher shop is just the first part of Birch + Butcher. A full-service restaurant with “family-style contemporary Midwestern cuisine” will open next week.
Until then, Birch + Butcher is serving a small menu starting Wednesday.
The offerings include breakfast and lunch items like bagels, sandwiches, salads and soups.
Dinner items will be served within a few days.
Birch + Butcher is a project from Chef Miles Borghgraef and Madison’s Underground Food Collective.
