LONGER AN­SWER: Cook­ing or bak­ing a pro­tein pow­der al­ters its struc­ture — i.e., de­na­tures it — but so does cook­ing a chicken breast or pas­teur­iz­ing an egg. Cook­ing changes the struc­ture of those amino acids. How­ever, the nu­tri­tional value of the pro­tein in the food re­mains un­changed, whether it is cooked or raw.
