Ap­ple Brus­sels Sprout Slaw

SERVES 4 TO 5 1 ta­ble­spoon ba­con grease (from the ba­con in

this recipe) or co­conut oil 1 pound Brus­sels sprouts, trimmed and shred

ded or cut into ⅛-inch wide rib­bons 1 ap­ple, finely sliced into match­sticks ¼ tea­spoon sea salt ¼ tea­spoon freshly ground black pep­per 2 or 3 slices ni­trate-free pas­tured ba­con,

cooked and bro­ken into pieces (op­tional)

In a large skil­let over medium heat, add the ba­con grease or co­conut oil and al­low it to melt. Add the shred­ded Brus­sels sprouts, ap­ple, salt, and pep­per, and stir to com­bine. Con­tinue to stir and cook un­til the Brus­sels sprouts are wilted down and start to turn golden, about 3 to 4 min­utes. Re­move from the heat and stir in the cooked ba­con pieces, if us­ing.
