Cheezy Queso Dip

SERVES 4 1 pack­age Ched­dar Style Shreds (Daiya) 1 cup pico de gallo, or your fa­vorite salsa 1 bag tor­tilla chips 1½ cups tomato, seeded and finely diced ¼ cup white onion, chopped 1/3 cup cilantro, chopped 1 small jalapeño or ser­rano chili, finely

chopped in­clud­ing seeds 1 ta­ble­spoon lime juice, freshly squeezed ½ tea­spoon fine salt (or 1 tea­spoon Kosher

salt)

Place the Ched­dar Style Shreds in a mi­crowav­able bowl. Heat for 2 min­utes. Re­move from mi­crowave and stir the melted cheese. Mix tomato, white onion, cilantro, jalapeño (or ser­rano chili), lime juice, and salt to­gether in a large bowl. Add pico de gallo to the bowl and stir. If cheese has not melted enough, place back into the mi­crowave for 30-sec­ond in­cre­ments, stir­ring each time un­til the cheese and pico de gallo are blended to­gether to make a smooth dip.
