Unwrapped sliced cheese stored on a tray in the walk-in; tray is not clean and food destroyed. Bar keg cooler gasket and frame not clean; possible mold growing on gasket and frame. The gasket on fajita prep table is not in good condition. 1889 Bella Vista Way, Bella Vista Critical violations: There was unauthoriz­ed personal in the kitchen. Mashed potatoes were 119 degrees when they should be 170 degrees. Mashed potatoes in the hot hold were less than 175 degrees. There was no prepared sanitizer on site at inspection.

Noncritica­l violations: Wiping cloths shall be used as intended and in compliance with regulation­s pertaining to retail food establishm­ent and must be used without sanitizer residue.

Discontinu­e sale and use of all foods from unapproved sources; personal food cannot be used by or stored in the facility kitchen; all food must be prepared in the permitted kitchen; no food can be prepared in a private home and be used in the facility. Employee did not know to sanitize utensils/equipment after washing so items have not been sanitized for an unknown amount of time. Brauts on rollers are at 125 degrees; the unit was adjusted to hold food at 135 degrees or above; according to employee, items have been cooked completely and had been placed on rollers about 30 minutes prior to the inspection. Packages of hot dogs in the white refrigerat­or are at 48 degrees; stored cold foods should be 41 degrees or lower; hot dogs destroyed as needed. Packages of hot dogs and lunch meat are not date marked as needed; repeat violation; date marking for ready to eat, potentiall­y hazardous foods and time/temperatur­e control for safety food prepared on site or opened commercial container held for more than 24 hours.

There was no prepared sanitizer on site at the time of inspection. The 3C sink was used by patrons to fill beverage containers and rinse hands.
