Three years ago, Miami’s first Chopped winner, Giorgio Rapicavoli, traveled to Peru and was blown away by the cuisine. Around the same time, the chef became equally obsessed with substituting vegetables for animal protein. Now he’s combining his passion for Peru and plants to produce a Peruvian plant pop-up dubbed Miraflores within Eating House one Monday per month. On the menu: ceviches showcasing avocado, corn, tomato, and zucchini; mango, pumpkin, or sweet potato tiraditos; eggplant anticuchos; and grilled tofu “lomo” saltado.
