Three years ago, Mi­ami’s first Chopped win­ner, Gior­gio Rapi­cavoli, trav­eled to Peru and was blown away by the cui­sine. Around the same time, the chef be­came equally ob­sessed with sub­sti­tut­ing veg­eta­bles for an­i­mal pro­tein. Now he’s com­bin­ing his pas­sion for Peru and plants to pro­duce a Peru­vian plant pop-up dubbed Mi­raflo­res within Eating House one Mon­day per month. On the menu: ce­viches show­cas­ing av­o­cado, corn, tomato, and zuc­chini; mango, pump­kin, or sweet potato tira­di­tos; egg­plant an­tic­u­chos; and grilled tofu “lomo” saltado.
