MAKE YOUR OWN PUMPKIN PUREE
For convenience, these recipes call for canned pumpkin. (Use canned 100 percent pumpkin, not pumpkin-pie filling, which has added spices and sugar.) But if you prefer to make your own pumpkin puree, it takes just three simple steps. Step 1: Cut a small pie pumpkin in half and scrape out seeds. Step 2: Preheat oven to 350 degrees and bake pumpkin halves, cut side up, on a sheet pan for one hour or until flesh is fork tender. Step 3: Scoop out all pumpkin flesh and puree in a food processor until smooth.
