CARROT CAKE PROTEIN LOAF
MAKES 1 SERVING
Ingredients: 3 large egg whites 1 scoop vanilla whey protein
powder ½ cup oatmeal or oat bran ½ cup grated carrots 1 tsp vanilla extract 1 tsp baking powder 1 tbsp chopped walnuts (optional) 1 tbsp raisins (optional) ¼ tsp pumpkin pie spice 1 dash salt 1-2 packets Splenda (optional)
1. Preheat oven to 350 degrees. 2. Spray small loaf pan with nonstick cooking spray and set aside. 3. Mix all ingredients in small bowl. Pour batter into loaf pan. 4. Bake 30 to 35 minutes until golden brown on top, or until a toothpick inserted into center comes out clean. 5. Allow to cool completely before serving.
