In­gre­di­ents: 3 large egg whites 1 scoop vanilla whey pro­tein

pow­der ½ cup oatmeal or oat bran ½ cup grated car­rots 1 tsp vanilla ex­tract 1 tsp bak­ing pow­der 1 tbsp chopped wal­nuts (op­tional) 1 tbsp raisins (op­tional) ¼ tsp pump­kin pie spice 1 dash salt 1-2 pack­ets Splenda (op­tional)

Di­rec­tions:

1. Pre­heat oven to 350 de­grees. 2. Spray small loaf pan with non­stick cook­ing spray and set aside. 3. Mix all in­gre­di­ents in small bowl. Pour bat­ter into loaf pan. 4. Bake 30 to 35 min­utes un­til golden brown on top, or un­til a tooth­pick in­serted into cen­ter comes out clean. 5. Al­low to cool com­pletely be­fore serv­ing.
