Oax­aca to Baja Cal­i­for­nia, from Ver­acruz to Mon­ter­rey. The use of fresh nat­u­ral — and some

or­ganic — in­gre­di­ents leaves you feel­ing well fed — and maybe even a lit­tle moon­struck. Rec­om­mended: chile en no­gada, chile rel­leno, mole verde de Pue­bla, ca­marones al ajillo,

wed­ding-cake cook­ies, and cheese­cake.
